The Sugarers

Jon is the third generation of the Williams family sugaring here and the little guys will be the fourth. This property has been sugared since at least the mid-1800s, with the Williams family doing that sugaring for the last 80 years.

Jon and Lauren live in the 1830s farmhouse his grandparents moved to back in the early ‘40s when they started a dairy farm. The trees he taps are the same ones his grandfather Bill tapped and Jon grew up loving sugaring season.

Sap Castle was born in November 2012 with a good old fashioned sugarhouse raising. Jon spent most of the year designing and cutting joinery and family and friends came together to raise the frame in a weekend. (Check out a neat video of that here.) After another year making everything from the windows to the doors to the walls, Sap Castle was ready for its inaugural season in 2014.
